Valpolicella "Ca Fiui"
Ca' Fiui is a hillside place known since Antiquity where, amidst vines and olive trees, Corte Sant'Alda has set up its cellar. The soft and suuny slopes produce well-ripened grapes ensuring body and equilibrium in this young Valpolicella with a very interesting character. Corvina Grossa, Corvina Veronese, Rondinella and Molinara are the main varieties; variable quantities of other native red grapes are also used, such as Croatina and Rossara The production site focuses on two vineyards at the heart of the farm: Roaro (7) (2.10 hectares); Valletta (5) (0.80 hectares) and the small Bosco (6) vineyard (0.80 hectares) for an overall area of 3.10 hectares. All the vines are grown using the simple guyot system with a density of 6200 plants/hectare; the average gradient is 8% and is essentially south-facing. The harvest, in keeping with tradition, is performed entirely by hand in early October. The harvested grapes are immediately pressed and fermented in 45 hl conical oak vats. Maceration lasts for about 15 days. Rack and return, daily wine-crushing by hand and delicate refinement in wood for three/six months, when the wine completes alcoholicand malolactic fermentation, ensure good complexity with a spicy rather than a fruity result.
