Valpolicella Classico Superiore "Caterina Zardini"
Grapes Corvina and Corvinone Veronese 70%, Rondinella 30% Grapes were selected from 36 hectares (90 acres) of hillside vineyards in some of the best viticultural areas in the comune of Marano Vinification Clusters were rigorously graded hand-picked, with Giuseppe Campagnola selecting the best lots on arrival. Natural and traditional drying of the grapes for 20 days. Extreme care exercised to maintain clean, healthy grapes. In October, cool controlled temperature fermentation at 22°C., followed by a 15 day maceration on the skins in large oak barrels. Cellars The wine was maturated for 12 months in 50hl Slavonian oak barrels and 6 months in bottle. Characteristic Deep garnet-red. Heady, spicy bouquet with intense, multylayered aromas of ripe cherry, bitter almond and tobacco. Full, rich flavors in the mouth carrying throught to a very lenghty pleasantly bitter finish. Food suggestions Particularly suitable with Risotto all'Amarone, Risotto with pumpkin, roasted red meats, and small game ("polenta e osei", pheasants, partridges, woodcocks). It could be perfect with fillet in pastry, grilled rib of beef, lamb meat. To uncork a hour before serving, to the temperature of 18-20°C.
