Corvina Corte Agnella IGT
Grapes Corvina Veronese. Hilly sunnyside vineyards of Marano di Valpolicella Vinification Best hand selected Corvina grapes in October. Traditional method, soft pressing, fermentation at controlled temperature, maceration for 10 days. Maturing in new Slavonian and Allier oak casks of 50 hl each for 12 months. Characteristic Deep ruby garnet red. Distinctive spicy notes. Dry and persistent. Soft extremly full-bodied, velvety, round with pleasant finish of oak and cherries. Correctly stored may be aged for 5 years. Food suggestions Excellent with roasted guinea-fowl, rabbit ‘alla cacciatora' (stewed in a tomato, wine and herb sauce), boiled meat, medium old cheeses, i.e. Monte Veronese 13 months. Exceptional match with "polenta e salame", especially with Venetian Soppressa (salami with or without garlic). To be served at room temperature 18°C.
